
This is just one of my favourite soup that my mum used to boil for our family. No idea why it’s called ABC soup but I guess it’s because it has vitamin A, B and C? So here I am sharing this yummy recipe for you.
Serves: 4
Preparation time: 10 minutes
Cooking time: 2-3 hours
Ingredients:
2 tomatoes, cut into wedges
2 carrots, cut into wedges
3 potatoes, cut into wedges
500 g salted mustard green, slice into big pieces
1 big brown onion, , cut into wedges
Beancurd (optional)
1 litre chicken stock (or you can use chicken frame and boiled it with water)
1 litre water
20 g freshly ground black pepper (depends on how spicy you want it to be)
salt to taste
Method:
- Put all the ingredients into a pot.
- Make sure the water covers all the ingredients.
- Bring to boil on high.
- Once the soup is boiling, lower down the heat to medium, and simmer for 2-3 hours, covered.
- Adjust taste with salt.
- If water level is low, you can keep on adding water.
Tips:
You can usually get the salted mustard green in the oriental supermarket.
