Muffins & Yarns

There isn’t much knitting for the past two weeks. Why? FH is back and I’ve been spending most of my free time with him :D . He’s going back to work this coming Monday for 7 weeks this time. I’m going to miss him heaps. Oh well, there will be more knitting contents then. Anyway, I baked some kiwi muffins after being inspired by my mum and here’s the end results.

Kiwi Muffins

A few weeks ago, I bought some Rowan All Seasons Cotton Print from Cucumber Patch. It was on auction and I cant help it as it was a very good bargain and shipping is free too!!! I also bought some Katia Samoa for Mum too.

Kiwi Muffins (Makes: 12)

  • 2 cups plain flour
  • 1 tbsp baking powder
  • 3/4 cup castor sugar
  • 1/4 teaspoon cinnamon
  • 1 egg, slightly beaten
  • 1 cup milk
  • 80 g butter, melted
  • 4 kiwis, mashed
  1. Preheat oven to 200 degree Celcius
  2. Mix all dry ingredients in a large bowl
  3. Mixx egg, milk and melted butter
  4. Add wet mixture to the dry mixture, stirring just until moistened in one direction
  5. Add kiwis, stir just until blended
  6. Spoon batter into twleve lined muffin cups, filling 3/4 full
  7. Bake for 20 minutes

    Oh I have never tried Kiwi Muffins. I recognise the muffin paper cases though: I used them last week too!!! Nice win with the cotton and Samoa!! Glad you are enjoying your time together!!!

    The muffins look delicious - will have to make some as I do love muffins! More yarn - what are you planning for the Rowan cotton - nice colors - a summer top?

    Great yarn, yummy muffins, and the FH in residence. You must be in heaven. I too would be leaving the knitting alone while he was home, after all, you’ll have 7 weeks to knit very soon. I’m sure that will pass fairly quickly.
